Let me start with a great introduction, as summarized by Dr. Daniel in an interview he gave to the Washington Post:

 

“We have science that supports the use of cartilage, gelatin, and other components found in homemade bone broth to prevent and sometimes even reverse osteoarthritis, digestive distress, autoimmune disorders, and even cancer.”

 

You might find this exaggerated, but believe me when I say many people swear by it. A lovely lady named Zeynep, who is part of a team that produces and delivers bone broth in Istanbul, says that she dropped all the medication given to her after chemotherapy, and her tests show that not even a trace of cancer remains. Bone broth is used as the foundation of the GAP diet, which is based on the Gut and Psychology Syndrome (GAPS) principles developed by Dr. Natasha Campbell-McBride. It forms the foundation because it is so healing to your gut.

The GAPS diet is often used to treat children with autism and other disorders rooted in gut dysfunction, but just about anyone with allergies or less than optimal gut health can benefit from it, as it is designed to heal leaky gut.

If your gut is leaky or permeable, partially undigested food, toxins, viruses, yeast, and bacteria have the opportunity to pass through your intestines and access your bloodstream; this is known as leaky gut.

Just a remainder; even 1 slice of bread can cause your gut to leak for a few hours. Remember???

Leaky gut is the root of many allergies and autoimmune disorders. Bone broth  contains many nutrients  that are not only very easily digested, but also contains profound immune-optimizing compounds that are foundational building blocks for the treatment of autoimmune diseases.

Bone broth is also getting attention for its use in sports medicine. Genuine bone broth contains components of cartilage that may help your body make cartilage. In addition, body builders have long used gelatin supplements to support muscle growth. Bone broth can be thought of as “the raw food version of gelatin supplements.”

 

A bone broth recipe

The following recipe came from my lovely niece Melis, pictured below, who got it from Zeynep and Müge, pictured above.

 

 

 

 

Although chicken bones are also used, I don’t suggest this at all, given the sad state of chicken farming. I just found out that they give chickens antidepressants when they stop laying eggs and eating. Disgusting!!!

 

The below recipe is with beef and lamb bones and cartilage, hopefully grass fed and organic.

Ingredients:

  • 2 lb. beef bones and joints
  • 2 lb. lamb bones, joints and spinal cord with marrow
  • 10 cups of water
  • 2 tablespoons of organic apple cider vinegar
  • Garlic and onions (depending on your preferences)

Preparation:

  • Soak all the bones in water for 10-12 hours.
  • Then place them in an oven, pre-heated to 356 deg. F, for 30 minutes.
  • Take the bones out and place them in the water, apple cider vinegar, etc., mixture and bring the pot to a boil. As soon as it boils turn the heat down to minimum. The heat should ideally be 194 deg. F. Just a mild click, click, never a boil; simmer. This should last 24 hours. Check the heat with a submergible thermometer every 3 hours.
  • Occasionally, spoon out the fatty layer on top of the water.
  • After 24 hours, take the bones out of the water.
  • Strain the broth through a porous cloth.
  • Pour the broth into glass containers (Pyrex), and when at room temperature place at the bottom of the fridge.
  • After 8-12 hours, remove any fatty accumulation on the surface, place in glass containers and freeze.

Drink a glass, after thawing, every day. Good health will be with you.
